Simmered Squid and Daikon Radish
Sweetness of daikon radish and umami of squid are compatible with each other.
Ingredients
- 2 squid if it's big 1 squid is enugh
- 1/3 daikon radish
- 700 ml dashi
- 70 ml mirin
- 70 ml soy sauce

Instructions
- peel the daikon radish and cut it into large peaces.
- remove the guts from the squid. Cut the body into 1 cm rings and cut the tentacles into chunks.
- add the dashi, soy sauce, mirin and daikon radish and squid tentacles(not body yet) into the pot and boil until daikon become soft.(about 45 mins)
- add squid body into a pot. boil for about 5 mins.
- check if daikon radish becomes soft and turn off the gas. dish up the food on a plate
