  1. Wash eggplant and cut it in half in half. put oblique notches in the skin.
  2. Put salt in the eggplant and leave it for 3 to 4 minutes.
  3. Place water, mentsuyu, soy sauce and sugar in a small pan and heat it until boiled. once it’s boiled turn off the gas immediately.
  4. After washing eggplant to drop salt, wipe off them with kitchen paper.
  5. Put oil into the pan and bake the eggplant skin at medium heat.
  6. flip over the eggplants and bake them at medium heat.
  7. after eggplants were cooked put them into the small pan which you boiled at 3. leave it until it gets cold, put it in the refrigerator until it’s cooled down.
  8. dish up the food on a plate
